The Balvenie Distillery is most unique. It grows its own barley, still does its own floor maltings, has its own cooper to maintain the barrels in which its whisky is matured and has its own coppersmith to take care of its stills. Balvenie Distillery was founded in 1892 near the ruins of the fourteenth-century castle by the same name. It is also located next to the famous Glenfiddich Distillery and, in fact, shares the same malt supply and water source. In 2001 it won a Gold Medal in the International Spirits Challenge. Some bourbon casks will continue to improve well beyond 15 years, and The Balvenie Malt Master selects some of these rare casks for bottling as The Balvenie Single Cask 25 Year Old. Like Single Cask 15 Year Old, each bottle is unique and hand-numbered, but the maximum number of bottles taken from any one cask is only 250. Nose: Sweet honeyed, oaky notes with a fragrant fruity bouquet. Taste: In the mouth the initial dryness immediately changes to a sweet honeyed burst of flavour that has butterscotch and toffee notes, rounded off with a vanilla oakiness. A well matured single malt, which has a long and lingering finish.
To create this rare 21 Year Old Balvenie - which has been matured in traditional oak casks - they transferred it to a port cask, or pipe, which has held fine port wines. Here it was sampled every month by The Balvenie Malt Master to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt, while preserving its original characteristics.
At the 2005 International Spirits Challenge, The Balvenie Portwood 21 Year Old was awarded a prestigious Gold Medal.

This is a 15 year old single malt drawn from a single bourbon cask of a single distillation. Each cask forms a limited edition of hand-numbered bottles - there will be a maximum of 350 bottles from any one cask - so each bottle is unique and unrepeatable. Each cask is subtly different, however, The Balvenie Malt Master selects for bottling only those casks that have the essential characteristics of The Balvenie Single Barrel - particularly honey, vanilla and oaky notes.
This 12 year old single malt gains its distinctive character from being matured in two woods. During its period of maturation The Balvenie Doublewood is transferred from a traditional oak whisky cask to a first fill Spanish oak sherry cask. The results is a smooth and mellow single malt of beautifully combined flavors - nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry -with a long and warming finish.
